Passion and knowledge are much in evidence in Chef D'Ambrosio’s culinary approach. From his early days in French cookery school, this gourmet enthusiast developed a strong interest in haute pastry-making, joining the workshops of Pierre Hermé at Grégoire Ferrandi School. On becoming a fully-qualified chef, Chef d’Ambrosio developed his art further by opening himself up to gastronomy beyond France, collaborating in culinary ventures with restaurants and hotels and at events in locations around the world, ranging from the Maldives to Dubai and, of course, Morocco, his current home.

By working alongside two-Michelin-star chefs Jacques Maximin and Nicolas Le Bec and other renowned chefs, such as Alain Ducasse and Christophe Cussac, during his career, Cédric d’Ambrosio has developed an exciting culinary style filled with surprises and unforgettable flavours.

A creative perfectionist, Chef d'Ambrosio has brought variety, originality and unmistakable refinement to the gastronomic offering at Mandarin Oriental, Marrakech.
